Why is flaked ice better than cubes in a laboratory setting?

Flaked ice is not too cold and considered to be more of ‘wet’ than solid cubes. This minimises ice burn and prevents the ice from sticking to an organ or sample. For these reasons, it is widely considered to be a gentler form of ice. Furthermore, flaked ice has a greater surface area making it cool the sample or organ in a more uniform way than a solid cube would do.
